Chimay is one of only 12 official monastery breweries (trappist). 95% of the brewery’s income goes to charity. Chimay beer has been brewed since 1862 at the Notre-Dame de Scourmont monastery in the south of Belgium. Initially used only for the needs of monks and monastery guests, it has been sold on the market since 2013. All Chimay beers are unpasteurized and the second beer fermentation takes place in the bottle. Chimay Red is the brewery’s oldest beer, brewed almost since its inception. Chimay Blue was first brewed in 1948 as a Christmas beer
